Freshly baked healthy muffins are a snap to make for your baby shower. To make your muffins interesting, you may choose to add additional ingredients such as dried golden or black raisins, dried cranberries, dates, or apricots; and nuts.
1-1/2 cups fast cooking rolled oats
1-1/2 cups non-fat milk
1/2 cup margarine, melted
2 cups whole wheat flour
1/2 cup brown sugar
1 tbsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 cup shredded carrots
1 cup shredded zucchini
Preheat oven to 400 °F.
Butter or line large muffin pan cups with paper cups. Set aside.
Pour rolled oats and non-fat milk into a bowl. Let stand 5 minutes.
Mix in egg and margarine. Set aside.
In a second bowl, mix whole wheat flour, brown sugar, baking powder and spices.
Fold in liquid ingredients, stirring only as needed to moisten
Mix in shredded vegetables.
Spoon batter into muffin cups until full.
Bake in oven 20 minutes or so.
