Lemon Squares Recipe

Our baby shower lemon squares recipe makes a sweet treat for your baby shower party.

LEMON SQUARES

Ingredients –

1 cup all-purpose flour
½ cup softened margarine
¼ cup confectioners sugar
2 eggs
3/4 cup sugar
2 tsp grated lemon peel
3 tbsp lemon juice
½ tsp baking powder
confectioners sugar for dusting

Preheat oven to 350 degrees F.

Combine flour, margarine, and confectioners sugar. Blend well. Press this mixture to the bottom of an 8-inch square pan. Bake for 20 minutes until lightly browned.

Beat eggs until lemon-colored. Add sugar, lemon peel, lemon juice and baking powder. Mix well. Pour over the prebaked layer. Bake for another 20 minutes. Cool then sprinkle with confectioners sugar. Cut into squares.
